It is been always followed because there's deep science behind this. According to AgamaShastra, to enhance sight sense the Garbhagriha has to be in dark. As per the biological science, your mind expands the eye pupils in dark places to increase focus to see things more clearly. Even a slight darkness can also trigger your brain to alert our other senses automatically because in dark our eyes are less reliable. We usually close our eyes to pray and when we open our eyes we should see the camphor which was lit to do the Aarthi in front of the idol. Closing eyes for some time and seeing the sudden dim amount of light is always been a good eye practice because it makes you feel refresh in a completely different way. This lam burnt in Grabhagriha and the very small light seen inside the dark activates your sight sense.

Just like darkness is used to enhance your sight sense, flowers and their fragrance are used for smell sense. Walking barefoot in the temple used for enhancing touch sense. Ringing bell used, to enhance hearing sense and Prasaadam in liquid or solid forms offered to enhance taste senses. Which means temples were built keeping in mind to enhance all the 5 essential senses in a most scientific way.
